After the 6-month credit was added to my account due to the Sigil cancellation, I can no longer see my subscription. The button now says "Subscribe," even though I’m already subscribed. When I click on it, it shows that my subscription is active and displays the credit icon, but the next payment date hasn’t changed. I’m not sure if the 6-month credit has been applied correctly, or why the subscription option no longer appears in the menu.

Did you wait 5-7 days after clicking the Redeem Now button to make this post? It specifically tells you in the email that it may take that long to reflect on your account.
I have a different concern I've reached out about just now, that Google Play still shows the old renewal date and I just want confirmation that Beyond will ensure I don't get charged on that date, but rather six months later. (I expect it'll be a few days before I hear back, but that's fine, that's how tickets go.)
To confirm: Once the credit shows up, it should show a date 6 months from the redemption of the credit. As the email states, it pauses the old subscription and gives you six months fresh (rather than just adding six months to your current subscription, which feels like it would have been easier, but whatever).

Yes, I waited and I even got an email saying I leveled up with an order reference saying thank you for subscribing...
