I was building out a monk on my phone when I noticed I could not add stealth as a skill proficiency. I have some pictures I can add but I’m not sure how to add them on mobile.
Check your race and background. There are races like Tabaxi that add it as there are backgrounds like Criminal.

You are correct. I used the autocreation to create the character and it was selected under race. Thanks for that info.
