I cannot make my character above level 1. When I assign the EXP, on the characters list and in the EXP manager it shows level 5, however the character sheet does not update and I cannot select new spells etc...
I believe adding xp for your overall level is not enough. Next to your xp you should see an up arrow with a number of levels you have earned but not assigned yet, but you still need to adjust the dropdown for the level of each class. Not intuitive if you only have the one class, but it allows you to multiclass (by picking a new class at the bottom of the class tab). I agree a cleaner way to level up single-class characters would be nice.
When you edit the character go to the class tab and there should be a level adjustment on the right side of the screen.
Ok ijust built a character using the milestone method. When ready to level click edit, go to class tab, to the right of your class name is a drop down with numbers. Select your new level then click what's next to view your character sheet to verify level increase.

Reason for that is just because you leveled up doesn't mean you leveled up in the same class (you can multiclass). Going from level 3 to 4 doesn't automatically make your Rogue 3 into a Rogue 4, as you could optionally become a Rogue 3/Fighter 1 instead.

Thanks for trying to help, were using the milestone version, and I've flipped between both and just can't figure it out. This is what I see:
