There was a popup when you clicked to share it that once published that was it and to make sure it is complete before you do.
What you can do is click "create new version". You can then make edits and publish that. The new version will replace the old one in any search listings, but when viewing that homebrew's details page they will be able to see the previous versions and use it if they wanted.

I will add, just in case it is unknown: for future reference you do not need to publish homebrew to use it. Any homebrew you make can be used for your own use without sharing it. Also, if you are in a campaign on here all the other players in that campaign can view and use your homebrew items as well, without you needing to publish them and without anyone needing any subscriptions.

When I started creating my homebrew content, I didn't realize that it blocks you from editing things once they're published.
I was wondering if it would be possible to un-publish all my homebrew, and I'd publish it all again once I had finished editing it.
Thank you for your help!
Not possible, I am sorry.
