Had the same problem with mithral plate. I just created a homebrew plate by taking normal plate mail, adding +1 ac bonus, and updated the description/title. However this still is a "magic item" in the eyes of D&DB. So I put the "Enhanced Defense" infusion on some random leather armor and made its' weight 0.
This keeps track of the infusion being used and gives me the armor that should be available to start with.

I would like to add Enhanced Arcane Focus to my Alchemist's supplies on my Alchemist Artificer, since Artificers can use tools as arcane focuses. But the site doesn't appear to be letting me. Am I doing something wrong?

Enhanced Arcane Focus isn't eligible to used with Alchemist's Supplies; according to the rules it can only be used on a rod, staff, or wand.
Artificers can use tools as spellcasting focuses, but an Arcane Focus is a specific type of spellcasting focus, not a general term for the same thing.
A lot of DMs might allow it anyway, especially since most DMs are very loose with their handling of spellcasting focuses in general. If you want to make it work on D&D Beyond, you can just put the infusion in a mundane rod/staff/wand and customize the name of it.
My infusions just straight up aren't working. I cant use spell refueling ring or enhanced arcane, nothing comes up on the list of items whether I have something in my inventory or not.

Yeah, D&D Beyond doesn't really do homebrew like this well.
You can only use each infusion once, per the rules
It might be possible now with the new party inventory system for compaigns, i personally haven’t tried it but it definitely seems plausible
