Make a new one after the previous is gone? You can't change the type of cannon, while the previous one still exists. Also the eldritch cannons last for only an hour before turning into thin air again:
It disappears if it is reduced to 0 hit points or after 1 hour. You can dismiss it early as an action.
So if you want a new one on the fly dismiss it with an action, create a new one with the next action by burning a spell slot.

The arcane firearm sigil can be carved onto any one of those types of items, but otherwise a plain, non-magical rod/staff/wand itself cannot be used as a spellcasting focus without it.
Luckily, I established when I was using enhanced defense on my shield, all my "gadgets" (Spells) were being hidden on the back. So I can just say that when I use the staff I made myself, I'm bracing it against my shield.

Do you mean in the dnd beyond character sheets? (its good to specify) I assume so since you mentioend actions page.
and I don't know actually. But its the same damage generally but you could create a custom action for the other two turret types

Under the actions page you have the three types of cannons listed where you can track their hit points
Select the one you want to have active, it will open the side menu giving you details about cannons, and that cannot specifically.
at the top of the side menu will be the "Customize" option. select this.
among the many options it gives you "Display as attack". click the box for this.
This will display the cannon's attack range, attack modifier/save DC and damage under your bonus actions in combat
It will also, to the fair right it will have a number listed as "limited Use". This is your cannon's current HP.
