Can a Barbarian wear this and still count as "unarmored" for the purpose of adding their constitution modifier to AC, or does this count as light armor?

Looks like rules as written the outfit provides an alternative AC calculation so no stacking with unarmored defense. But with all things ask your DM and if you are the DM decide if you want to change that part of the item for your game.
From the stat block for Pride Silk Outfit: "Type: Light Armor Cost: 500 gp Weight: 4 lbs" so yes it counts as Light Armor and would disqualify you from benefiting from Unarmored Defense or other similar features/spells.
Also even if it were not armor as Bran points out RAW you cannot stack multiple different ways of calculating AC. This means you can't stack something like Unarmored Defense with a spell like Mage Armor. If you had access to both then you would compare Unarmored Defense(10 + Dex + Con + Shield) to Mage Armor (13 + Dex + Shield) and choose which AC value to use. Personally, I found this very surprising and jarring when I learned about this in 5e but I have come to accept it as a design choice. This allows for a wide variety of class features, racial traits, spells, and items to exist without the designers needing to worry about all their possible interactions.
If you are looking for ways to increase your AC that will work with Unarmored Defense then you want to look for effects that simply state "You gain a +X bonus to AC . . ." like Cloak of Protection and Ring of Protection.
The Pride Silk Outfit in the rules is not actually armour. It only has the 'Light Armor' type in DNDBeyond because of a limitation with their system. *
That said - it is an item that sets an AC calculation and therefore won't stack with any other AC calculation - including Barbarian's Unarmoured Defence.
For it to work it would have to be an AC bonus like +1. Those do stack with AC calculations.
* In fact - if it were armour then it wouldn't provide any extra AC - since the item itself specifically says you only get 11+Dex if you're not wearing armour.
