Thinking of doing a barb/monk multiclass, for the unarmored defense both get, but I’m not real experienced with the monk…what do you think would be the best time to take the monk levels and how many?

Keep in mind that unarmored defense doesn't stack. You use one or the other. Also you use the one you get first, so if you wanted to use the Barbarian's you should start leveling as Barbarian and vice versa.
As for when to take Monk levels, you normally really want to put most of your levels into Monk to have a decent amount of Ki points, so that means more than just a small dip. That means you will get the Extra Attack feature from there. Normally Extra Attack is something you want to get as soon as possible since it's the biggest power spike for martial classes so either you go at least 5 levels in Monk first before you take 1-4 levels in Barbarian or you take 1 level in Barbarian and then at least 5 levels in Monk before going back for another 2-3 Barbarian levels eventually.
Yeah, i forgot that the Unarmored defense doesn’t stack…however, taking a level in Barbarian might be a good idea for the Monk, simply for the damage resistance.

I`d start Barb 1, then 5 levels in Monk and again 2 in Barb. Beast is good because the Claw attack gives you a total of 5 attacks with FoB and Rage it`s 5x1d6+6. If you go Hexblood, or take Feytouched or Magic initiate for Hex, it becomes 5x2d6+6. (Mistake here, but Hex of course is good on a Monk, whereas Hunter's Mark doesn't work). However, it`s not optimal and you`ll have to dump Wisdom or strength, so either not making use of Stunning Strike or the rage damage bonus. Maybe you consider Moon druid - Monk or Barb, or Swarm Keeper - Monk instead.

I've found most of my Monk/Barb concepts end up sitting at 14 Str and hoping for a Belt of Giant Strength due to this. Though most of my Barbs end up wanting one those in the end, regardless of their Str, anyways.

Hex or other concentration spells aren’t really an option unless you’re out of rages.
