Anything is possible, you'll likely need to get the Fighting Initiate: Two Weapon style and Dual Wielder Feats to make it as good as you can. You could also use dual battle axes instead of hand axes if you wanted a bit of a damage boost as well.
Edit: You might have to keep an eye on which abilities you get that use a bonus action as that'll compete with your off hand attack.

If you want inspiration for a raging Viking using two axes (actually, they would be called seax), read John Gwyne's The Shadow of the Gods. Lots of raging barbarians. Totem of the Wolf or Bear would be perfect.
The stories of viking berserkers fit well with a bunch of Barbarian types; the actual Berserker sub-class is the obvious one, but then all Barbarians have a kind of fighting frenzy when you combine reckless attacks with Rage, and Berserker isn't well suited to dual wielding if that's what you're keen to use.
You might also consider a Totem Warrior with the Bear totem, since berserker literally means "bear shirt" or "bear warrior", though you could also go for an Ulfheðnar (wolf warrior), these both have some powerful features in that sub-class and it's got a bit of Druid mixed in which seems appropriate.

Yup. Vikings make for lousy barbarians. Champions and Battle Masters are a better fit.

Why would a viking be calling an axe a knife? Sounds weird. Do they call shields helmets, also?
