My group is doing a custom campaign with all dwarves and I chose to go with a zealot barbarian but I want to take 3 levels of fighter to get battle master (I know probably not the best choice). We’re only using PHB and Xanathars, and tool proficiencies are going to be important in the campaign. I just am not sure when the best time to take the 3 levels of fighter and I don’t know how many levels the campaign is going to.
You definitely want to stick with barbarian until you pick up extra attack. Level 5 is a good spot, but I think Zealots have a really good reason to stick it out for another level. The extra rage per day is very good, but what really makes it worth it is the save reroll from Fanatical Focus which will save your butt. I'd take it to level 6 and then multiclass into battlemaster. If you're going to go for action surgey goodness I like battlemaster as the choice quite a bit. Maneuevers will help spice up the rather simplistic Barbarian combat routine.

I would say take 5 levels of barbarian first to gain the ASI and Extra Attack. Then take your 3 levels of fighter.
Battlemaster has good options for a barbarian, I prefer Champion for the Improved Critical. It really depends on your build.
