I am looking at Dwavern Gods and their domains which seem to be partially allocated to Deities in Tashas Cauldron of Everything.
Peace domain has been given to Berronar Truesilver and that is it,
Gorm Gulthyn who as a Lawful Good God for organising defence of Dwarvenkind seems to be perfect for Order domain. especially as he only has War which he shares with Clangeddin. Actually Moradin also seems suited for Order domain too.
Looking at Twilight, it seems obvious that Dumathoin as Keeper under the Mountain should get this Domain. Or is this making his cleric too powerful with Grave and Knowledge already?
Does anyone else have an opinion or take on these? I wish the WoTC creators had updated the Pantheon's properly when they do this.
Ultimately this is a flavor question, not a mechanical one. Feel free to say that X god is of A, B, and C domains while Y god is of D and E domains, as long as you think those domains make sense for those gods.
The suggested deities for each of the new domains are just that - suggestions. They're good for sparking ideas, but they were never meant to be a comprehensive list.

On top of it being a flavor question. The lists presented in some of the domains of possible gods are never meant to be comprehensive. Even over officially printed and established gods that exist in various modules and settings. The entries would actually be quite lengthy from that alone if they did. They just mean to provide a few general examples.
I have a dwarven cleric of war domain, and I picked Gorm because he was a protector of dwarves, which was what I wanted my cleric's backstory to be. Interestingly, there is a site that has been adding more information to Gorm and his war priests, "barakor". But now I have more answers than before. This wiki site seems to be the best with dwarven deity info: https://forgottenrealms.fandom.com/wiki/Category:Dwarf_domain_deities I just wish I could find more info on these knightly orders it mentions. Hope this helps.
Yes I have found the Forgotten Realms Fandom Wiki, it's very good. A lot of this is based on FR Demihuman Deities book published 1998 which provides good inspiration despite being from an old edition. The knightly orders are spread around many FR modules and sourcebooks or just made up in this book.
It's tough to say, for certain. Order, I think, is the hardest to pin down. Peace could belong to Berrenor Truesilver and Sharindlar. Twilight could fit Gorm Gulthyn as much as Marthammor Duin.
But these are just suggestions. Nerys Kathon, one of the Heroes of Baldur's Gate, is a canonical cleric of Kelemvor with the War Domain.
I guess one of my questions are the Knightly Orders made up of clerics, or made up of fighters? I have a battlemaster fighter from the same dwarven stronghold as the dwarven cleric, and a knightly order if for fighters could fit nicely. I just don't know where to find more info?

Bards, clerics, fighters, paladins...all of the above and then some.

Yep, exactly. They're just a starting point.
