Aight, I know it exists somewhere, I swear. Outside of specific magic items, and the SAC which sets the precedent of Scale Mail not being made of metal ("and if a druid comes across scale mail made of a material other than metal, the druid might wear it"), I swear there is somewhere in one of the books with a little sidebar or something about DMs working with druids to make armors made out of other materials, including the express example of Chitin. Can someone gimme a hand in trying to find it, I've been searching for an hour.

Trying to get your physical content on Beyond is like going to Microsoft and saying "I have a physical Playstation disk, give me a digital Xbox version!"
On page 143 of the DMG there are tables of “minor magical properties” and number 13 is “strange material. The item was created from a material that was bizarre given its purpose. It’s durability is unaffected.” I hope that was what you are looking for, even if it is specific to magic items.

Even IRL medium and even heavy armour was made of wood and bone, and in DnD where you can have magical trees and dragonbone it would be even better.
In Eberron for example Eldeen druids make armour from ironbark, Gatekeeper druids make theirs from the unnatural bones of swamp monsters and Jhorash'tar druids make theirs from the regular bones they make as hard as steel with a special ritual.
Honestly, I think I'm in the same boat as you. I remember seeing it once, then when I searched for an official source, I came up with nothing. I probably stumbled upon a homebrew online and thought it was legit
There were plenty of examples in other editions, but other than Dragon Scale Mail, there are few official examples. Adventurer's League modules have included magic scale mails made of wood or fungus (using the minor magic properties referenced above), but other than that it would behoove a Druid player to discuss with their DM. You might be thinking of Pathfinder, which still includes a number of varied armor materials.
The classic example in the Baldur's Gate games was that Ankheg remains could be brought to an expert smith and turned into Ankheg Plate, which could be worn by Druid/Fighters (you still needed the armor proficiency, after all).

Bulette hide was classically used as an armor. Even up to plate. I don't think there are mentions of it in this edition.
