1. Does unarmored defense from monk apply to wild shape forms, and if so do you use the wild shape's dex/wis scores or your own? 2. Are wild shape attacks (claw, bite, etc.) considered unarmed attacks for the purposes of being a "monk weapon" / "martial arts attack"? I.e. can you shapeshift into a bear, bite or claw the target, and then get a bonus action attack using martial arts? 3. If the above work, would it be better to go with monk over bear totem barbarian as a low investment secondary class for moon druid?
1. Yes, unarmored defense still works, since you retain your class features in wild shape. Since Wild Shape uses your Wis/Int/Cha and the beasts Dex/Con/Str you would use the beasts Dex and your Wis.
2. No Claw/bite etc. are not "Unarmed Attacks", they are weapon attacks with a natural weapon. You would not get a bonus action attack from martial arts after using one of those. You can however still perform unarmed attacks while in wildshape, but that would be a normal unarmed attack with the beasts Str/Dex Modifiers and you wouldn't gain any benefit from having a claw or bite attack. It could however use your monk class features, so even if you're in wildshape you could use your martial arts die and make a bonus action attack (still only an unarmed attack, not a claw or bite).
3. That's for you to decide.
