Ok so ive been playing DnD since about 3rd ed but i've never done a druid so i though i'd give it a shot.
1st level was pretty straight forward i went with a dex based druid and wild elf. so 16 dex and 16 wis. Originally i was going to gimp wis but then i though i might actually need the spells so i kept it good.
Now i've hit level 2 i went with moon druid so i can get some good wild shapes. my understanding is i get to use beasts that are CR 1. Is that also limited by size? ie medium creatures only?
So my DM has said that basically i can pick a terrain type and i can use creatures from that terrain, I'm thinking forest, since im a wild elf from the Vesve Forest. any good suggestions of beasts?
The limitations for Wild Shape are given in the table under the Druid class features section - Moon Druids only subvert the CR limitation, not the movement type restrictions. Size is not one of the limitations, although size is often linked to CR.
Xanathar's Guide includes tables of suggestions for learned shapes based on where you're from, but at the end of the day it's up to you and the DM to decide what shapes you know. Many DMs may not want you running around as a dinosaur if it's not appropriate for the setting, for example.
Also: good call on not dumping WIS. Moon Druid wildshaping is very good, but it's also full of peaks and valleys as you level (especially level 2, 10, and 20). Druid spellcasting, on the other hand, scales beautifully and will always be useful.
That’s what I did with my Druid, I picked forest and I came up with a list of beasts with the forest terrain type. A couple of suggestions:
Pick a mixture of CR’s. A stray cat can scout in places where even the best rogue can’t.
Pick a variety of types with different special abilities. I needed the giant spider’s 10’ blindsight once to save another PC.
Increase your wisdom to 18 at 4th level. That’s much more useful to you than a high dexterity is.
Type up summaries of the beasts you can change into. Then you’ll have that ready when you need to pick which beast is best at the moment.
Consider casting buff or control spells before you wild shape. Entangle for example can be maintained while you’re in beast shape and can make a huge difference in combat if you place it carefully.
OK... Really weird question, and I haven't seen it answered anywhere I've looked....
If my party was in a situation where all food options had run out (let's assume all magic slots were expended, and no long rests were had) ... Could my moon druid wild shape into something like a cow, let the party cut some pieces off it to cook, and then I could wild shape back?

That would be up to the DM but should not be really necessary. Characters can go 3+con days without food before starting to suffer from exhaustion, so lack of long rests would be the biggest problem. If you do get a long rest you can prepare and cast goodberry.

Second, it would be a DM call. Cutting off sections of a body will cause damage and a cow only has 15 so you might not get far, or at all, before going to zero hp and reverting back to yourself with the other PC’s hunger filled eyes greedily eyeing your carved flesh (if the damage was greater and carried over to your regular form). And there are not much in the way of rules to handle losing parts of your body (hp represents more than how many times you can be stabbed with a knife)
So if I was DM it would be a “no” on that tactic. Goodberry does the job with ease.
That's why I said all spell slots were expended. I agree, it would be gross, but desperate times/desperate measures.... So, I can see your reasoning behind a cow with only 11 hit points. Perhaps if needed I'd go for a cave bear and let them lop off a butt cheek or just a few tiny slices for jerky.

Traveling with people that have no means to feed/water themselves and are willing to eat parts of you seem to be a bigger issue. :)
