You retain the benefit of any features from your class, race, or other source and can use them if the new form is physically capable of doing so.
where the key part is, "if the new form is physically capable of doing so." - this being Simic though, the story could well fit to allow acid-spitting bears, or a horse with tentacles for hooves!
From a strict reading of the rules, any Simic Hybrid benefits (that you've chosen) are carried over into Wild Shape as long as they don't specify a particular anatomy that your new form lacks:
Manta Glide - You have ray-like fins that you can use as wings to slow your fall or allow you to glide. When you fall and aren’t incapacitated, you can subtract up to 100 feet from the fall when calculating falling damage, and you can move up to 2 feet horizontally for every 1 foot you descend.
If your new form has "ray-like fins", you could retain this benefit. But I imagine most Wild Shape forms don't, except for aquatic creatures that don't have a walking speed anyway and/or can't breathe above land...
Nimble Climber - You have a climbing speed equal to your walking speed.
No anatomy specified. It works.
Underwater Adaptation - You can breathe air and water, and you have a swimming speed equal to your walking speed.
No anatomy specified... It still works by RAW. (...Though the trait probably should specify how it's changing your anatomy, so I might house-rule otherwise as DM.)
Grappling Appendages - You have two special appendages growing alongside your arms. Choose whether they’re both claws or tentacles. As an action, you can use one of them to try to grapple a creature. Each one is also a natural weapon, which you can use to make an unarmed strike. If you hit with it, the target takes bludgeoning damage equal to 1d6 + your Strength modifier, instead of the bludgeoning damage normal for an unarmed strike. Immediately after hitting, you can try to grapple the target as a bonus action. These appendages can’t precisely manipulate anything and can’t wield weapons, magic items, or other specialized equipment.
This very clearly specifies a certain anatomy (that I'd probably say no beast has). No grappling appendages in Wild Shape.
Carapace - Your skin in places is covered by a thick shell. You gain a +1 bonus to AC when you’re not wearing heavy armor.
Also clearly specifies an anatomy... Unless you Wild Shape into a beast with a shell (like the giant snapping turtle from ToA or the hulking crab from SKT), no carapace for you.
Acid Spit - As an action, you can spray acid from glands in your mouth, targeting one creature or object you can see within 30 feet of you. The target takes 2d10 acid damage unless it succeeds on a Dexterity saving throw against a DC equal to 8 + your Constitution modifier + your proficiency bonus. This damage increases by 1d10 when you reach 11th level (3d10) and 17th level (4d10). You can use this trait a number of times equal to your Consitution modifier (minimum of once), and you regain all expended uses of it when you finish a long rest.
Unless you Wild Shape into something that has acid glands in its mouth, this probably wouldn't work either. (...Also, Firefox just pointed out that "Constitution" is misspelled in that last sentence.)
All that said, as the Crawford tweet says above, you're not strictly beholden to the exact wording. Go with what's best for your story. Just make sure everyone in the group (DM and players) is on the same page about any house-rules or special rulings so people know what they're getting into.
No as anything that relies on the physical form is not retained so if your simic hybrid can breathe underwater, i.e: cannot when you wildshape into a brown bear and they cannot spit acid etc.

Hi everyone hope y’all had a wonderful Christmas.
I was wondering if the racial abilities of a Simic hybrid are still usable in wildshape?
So for example you can Be able to breathe underwater and have a swimming speed. Or have acid spit, climb speed etc.
would this work in wild shape so say a Brown bear can swim underwater and potentially spit acid.
I've not seen a specific ruling on this, so would personally say that it falls under the, "go with what's best for your story"
