I know how I would answer these questions but wanted to know what others think:
1. Monks can't take two-handed weapons, but if they take a versatile weapon, like quarterstaff, then could they use that two-handed?
2. If using a staff two-handed, can they still take an unarmed martial arts attack as bonus action? If so, could it be a punch or other hand attack, or would it have to use a different body part?
3. Would a grapple attempt be considered an unarmed strike for the purposes of determining if the monk can take a martial arts attack bonus action?
3. Does the Dexterity modifier to damage apply to the martial arts attack bonus action? Or is it the same scenario as using two weapons without the two-handed fighting style?

1. Yes. They can use a quarterstaff two-handed. It is a simple weapon and counts as a Monk weapon.
2. Yes they can still make a bonus action attack - this is still an unarmed strike so you could flavour this as releasing one hand for a punch or using feet for kicking, using knees or elbows or the Trusty Headbutt™.
3. No. A grapple is still an Athletics check that is contested by the target's Athletics or Acrobatics. It is a "special attack" and not considered an unarmed strike or monk weapon strike.
4. Yes you can add Dexterity (or Strength) bonus to damage. Unarmed strikes for monks are not the same as two-weapon fighting and do not follow the same rules. It states in the Martial Arts feature you can add your Dexterity or Strength to the attack and damage of your unarmed strikes and the damage die is d4 (increasing as you level up). They also apply when using Flurry of Blows.
