Quick question: Could you make unarmed strikes your kensei weapon? Additionally, if I made a homebrew race that made your Unarmed Strikes Magic weapons that otherwise follow the same rules as Unarmed Strikes, could those be my kensei weapon?
Well, technically Unarmed strike is on the list of simple melee weapons on pg.149 in the PHB. The only other mention of the unarmed strike in terms of melee is on pg.195 under Melee Attacks which refers you back to the weapons table from pg.149. Did you have a specific reference for otherwise that I missed? Thanks.

Technically that is no longer true, unarmed strikes got removed from the table.
As for the OP, you can't make unarmed strikes your kensei weapon without the DM houseruling it and if I were DM, I wouldn't allow it. The features that make use of your kensei weapons are designed with a trade off between the weapon and your unarmed strikes in mind.

No, you can’t because unarmed strikes are neither simple nor martial weapons. They’re a separate category.

No but monks already turn their unarmed strikes into magic at 6. Which is basically around the time you start finding monsters that have resistance.
