That’s one of the things I don’t like about the Ready action. If you ready a move to get out of the way of a dropped boulder, your opponent can just do something else and you just stand there because your trigger never happens.
I would let a trigger of “when he drops the boulder” work but I wonder if others would say that the dropped boulder would hit before your triggered reaction took effect. I guess you could make the trigger “when the opponent flies above me” and hope that your move takes you too far away for the opponent to fly above you again on that turn.
If I had one of my players attempt this I would default to the standard already set by the Winged Kobold. One of the Winged Kobold's attacks is flying and dropping rocks. It is listed as an ranged attack, reliant on hitting AC instead of DEX save. I would probably also require the flying paladin to make a search action to find an appropriate rock/ boulder one round, then let the attack roll happen in the next round. (Unless they just happen to be fighting in a rocky area with perfectly sized rocks all around) Another consideration is that boulder size is going to be limited based on visibility. Sure, you could probably pick up a 50 pound rock, but could you see past it to aim your drop?
All in all, I think it would be a possibility, but when you're looking at 2 20th level paladins fighting, there are plenty of other options with higher damage opportunities, especially if the vengeance paladin is STR based. (Ranged attack roll less reliable if it has a low DEX)

Changing actions after the first one misses sure. But before any miss but because the other readied an action? Meta.
... Isn't this a duel of banishment? Banishing smite or just touch banishment? I know the conquest will have 20 Cha probably to maximize utility of his fear auras, but still.. You both get banishment and banishing strike, and can 1 shot the enemy. I'd do that over trying to whittle down hp
If they are both from the material plane a successful banishment would just be temporary. Plus, a 20th level paladin with a 20 CHA is going to have +16 to it's CHA save, against a 19 DC, so most likely any banishment attempt would fail.
Not sure what you're worried about, you're immune to fear, and that's the Conq pallys whole shtick, without that he can't match you having advantage on all attacks, hasted and potentially flying.
Conquest Paladins do not perform well against things immune to fear.
First Nothing from its Aura of Conquest effects you.
Second he has a one off chance to guarentee hit you only once. Guided strike is a one off channel divinity.
Third you can effectively burn 8 spell slots in 2 turns with haste. Compared to his max of 6. Dice wise with a longsword this is 54d8 with 2 blinding smites add hunters Mark's 1d6 per an attack and you get 54d8+6d6. This gives you an average damage of 264. This still leaves you with 3 lvl 2, and 3 lvl 1 spell slots. In comparison a conquest paladin with a longsword can only deal at the highest on his first turn 16d8+5d10 and 15d8+5d10 on his second. This is an average damage of 194.5 in 2 turns.
Your only concern is his level 20 ability thankfully you're the most mobile Paladin in existance and can easily do so.
A Conguest Paladibs only advantage in this is his survivability with Conquring Presence. If that's removed theres nothing the Conquest Paladin has that's much of a challenge for any other Paladin let alone a Vengeance Paladin.
