Newer player playing an Oath of Vengeance Paladin for a homebrew god. I want to RP more anywhere I can and have been writing ideas for sayings for the Vow of Enmity since I don't want to keep saying "I cast Vow of Enmity" . Need some more ideas for it. No ideas are bad ideas, sometimes the PC is an idiot.
Background on the PC: Oath to the homebrew God of Justice and War. Parents were killed by a cult who believed in killing all magic users. Spent the rest of his life with other family defending others so no one else knows the pain, until he moved to the church and became a Paladin. Was rescued by the adventuring party who are now hunting the aforementioned cult and some Warlock. Again PC is sometimes an idiot, but a loveable one.
I would try to use a phrase that refers more to the oath since Vow of Enmity is obviously part of oath of vengeance.
I would say a mini prayer to my god about fulfilling my oath. Sorry i'm not as much help but i think it's cool when players try to play into the spells rather then just saying i cast.
My Vengeance paladin just uses the boondock saints prayer, but I change it to fit the fact that she follows the platinum dragon.
"And a Shepherd I shall be For thee, my Lord, for thee. Power hath descended forth from Thy hand My feet may swiftly carry out Thy commands. So I shall flow a river forth to Thee And teeming with souls shall it ever be. In Nomeni Draco, et Iustitia, et Spiritus Sancti."
'History will leave you unmourned, unremembered.' (bonus points if you call your weapon History)
'Repent Sinner!'
'Vae Victis' (woe to the vanquished)
'I have a 2 oclock, this will have to be quick.'
'I'll be your Huckleberry' (From Tombstone, the moustache aficionado film of choice)
Quality options. I especially liked the "2 o'clock".
To the OP, some of it is going to depend on what your character is like. Smart Alecs will say something different than the guy who is genuinely serious about his oath and trying to fulfill it with all solemnity. Tapping into that aspect of your character can help you determine the voice that would be used.
As has been illustrated through several of the replies so far, you can borrow something from anywhere and make it fit, even if the context doesn't match. Buzz Lightyear's "To infinity and beyond" has a nice ring to it with some interesting philosophical twists. A quote from Top Gun (1986), "I feel the need, the need for speed!" Something as simple as "Meet the maker!" or "Back to dust/the depths" etc.

"I will visit ______'s vengeance upon you!"
Fill in the blank with the name of your deity or just refer to yourself.
Mine is that I point my finger at the person/monster and say "YOU . . . . will be brought to justice"
'Hello pretty pretty'
'Your name is written in the book of souls'
'You lived your life on credit, repayment is due'
'History will leave you unmourned, unremembered.' (bonus points if you call your weapon History)
'Repent Sinner!'
'Vae Victis' (woe to the vanquished)

"My name is ___________________, you killed my parents. Prepare to die."
Or
"Mine's is the blade/hammer of [insert your god's name]. [Name of weapon] has an unquenchable thirst; for your blood!"
I'm fond of a quote from a book I quite enjoy, where a barbarian is cleaving through guards and sees one trying to crawl away:
"You there! I see you, f*cker. No one gets away."
Quality options. I especially liked the "2 o'clock".

I only tend to cast it on something that has already hit me, so it tends to be something like
"How dare you!!"
"You are really starting to p*ss me off!"
or to quote Blade
"You do not know who you are f*ucking with!!"
Or I just growl while giving them the finger.
A favorite of mine is from one of the Dragon Age Origins trailers: "The righteous stand before the darkness, and the Maker shall guide their hand."
But substitute "the Maker" with the name of your character's god.
Or nice and simple: "You will fall by my hand."
Or if your character really is kind of a goof you could quote Garland from Final Fantasy: "I, (character name) will knock you all down."
