So I am going to be playing a gloom-stalker and I’m a little bit unsure of how the invisibility works. It says: “while in darkness, you are invisible to any creatures who rely on darkvision to see you in the darkness.” So.... does that mean I am invisible until I attack or cast a spell? and then can I become invisible again after that on the next turn?
I think I agree with your interpretation. I would add, in order to regain the benefits, you would have to break line of sight of your targets and Hide/Stealth to find a new darkness to attack from. You can't just stand in front of them and become invisible to darkvision again.

You totally can. As long as you're in darkness and the enemy relies on darkvision (as opposed to, say, blindsight) they can't see you. Period.
This ability (while in darkness versus enemies that rely on darkvision) along with the lvl 18 monk ability are effectively Greater Invisibility with the added bonus that they aren't technically magical effects and as such can't be dispelled or suppressed by anti-magic.

No, you're just invisible. The invisible condition doesn't end if you attack or cast spells. That's a rule of the Invisibility spell specifically.
