What is a "tunnel fighter"? I don't see anything official about this. Can you advise which book this is in?
If this is homebrew, it doesn't really fit the discussion. Homebrew can do anything you want, as long as DM permits, so of course it can be broken. The discussion is about achieving multiple sneak attacks normally and what your opinions on multiple sneak attacks are.

So say I have two mobs side-by-side...
I attack the first with Green-Flame Blade (and get a Sneak Attack in), and "cleave" on the second with the jumping fire damage...
Then I use my Bonus Action, Insightful Fighting, on that same second mob, win the Insight roll (against their Deception check), so a Sneak Attack is applied against that second mob...?
This should "get around" the "once per turn" because the Class Feature clearly calls for a Sneak Attack to be made in the insight vs. Deception roll is made...?

Insightful Fighting isn't an attack, it's an ability that makes it easier to use Sneak Attack on a target by allowing you use it even without Advantage on the attack roll. You use that Bonus Action to make the contested ability check, and if you succeed then for the next minute you can do Sneak Attack damage against them even without Advantage on the attack. The other requirements still hold though. You have to use a ranged or finesse weapon, and you cannot have Disadvantage on the attack.
As far as I know you can sneak works once per action meaning you can do 3 sneak attack max but you will mostly do it twice with your main action an offhand weapon as a bonus action
This Surprisingly doesn't break the game though from my experience Arcane trickster is on pair with whispers bard so rogues definitely need it to be strong

The fun part is it does not say "once on YOUR turn", so if you have a way to make an attack on someone else's turn, you can potentially land it more than once per round. In most cases, this will only add up to twice per round, because you'll likely be using your Reaction(either as an Opportunity Attack, or if you have a Battle Master in the party with the Commander's Strike maneuver), and by default you only get one Reaction per round.

Absolutely you can. The rules for Sneak Attack do not limit the timing of the attack, as long as it's just once per turn and you meet the situational requirements(advantage, or an ally next to the target, etc).
You can sneak attack as long as enemy comes on you when you are a dual wielding cavalier (spear and rapier) with polearm mastery&blademastery, the only theoretical limit is that the targets will lose their movement speed and pile up around you at some point, thus you can have a maximum of 8 opportunity attacks with sneak with a level 18 cavalier/2 rogue, ofcourse if there are creatures who are tiny, or aerial this number can increase or if the fight itself is aerial(a flying character perhaps). Anyway even without tunnel fighter it's possible due to level 18 feature of cavalier, not very useful imho still can be fun with an half elven cavalier who also has elven accuracy and piercer though...(even more fun with 18 cavalier/1 rogue/1 hexblade) a cavalier with underhanded tricks can be fine as now paladin has evil archetypes too...

Assassin gives you Advantage against targets that haven't taken a turn yet, but it doesn't allow you to make multiple sneak attacks in the same turn.
1 sneak attack per round is easy, 2 isn't difficult with some investment, 3+ gets more complicated.
The cavalier M/C was mentioned but that takes so many fighter levels they aren't big bonuses per sneak attack.
Scouts get an extra. Thieves in tier 4 can get 5 in the first round under ideal (read as unlikely) circumstances.
The UA marilith epic boon mentioned earlier is limited to 1 extra reaction per round instead of turn.
What hasn't been mentioned are things like combining class levels with monsters. A marilith, for example, has a reaction on every turn.
It's theoretically possible to get many sneak attacks. It's more likely to get 1 or 2.
