I've delved pretty heavily into D&D, but haven't had the opportunity to try an Arcane Trickster rogue.
As I understand, "Mage Hand Legerdemain" is a big part of what makes the Arcane Trickster formidable...essentially giving you a short range telekinesis to aid in your sneaky ventures.
What are some of the possibilities with this mage hand?
I've tried to concoct a few ideas that seem effective...
1. Place a vial of Alchemist Fire in an enemies pocket, then shoot it with a crossbow to trigger an explosion.
2. Pour poison into an enemy's food.
3. Loosen a chandelier or hanging object down upon a target.
4. Grab keys to a prison cell you currently are trapped in.
5. Restrain opponents with ropes or manacles for advantage or silent takedowns.
6. Pickpocketing.
7. Distractions (tapping shoulders or tossing objects for noise)
8. Cover a spellcasters mouth or eyes to prevent verbal component or aim of spells (or at the very least, impose advantage or disadvantage)
9. Toss a smokebomb for quick escape.
10. Secure grappling hook to scale buildings or structures.
Only partway into lvl 3 but I used it to incite a bandit riot, which was fun.
Party was disguised and infiltrated a bandit "meeting". Myself (Trickster) and our Bard started using message to tell the loud ones their leader was lying, and keeping their share of the gold. Once they started getting agitated, I threw things with the invisible mage hand from within their ranks, like a cafeteria food fight, turning them against each other.
Turned a 15 to 5 scenario into an easy win :)

...these are a few ideas that I'd try to attempt.

I'm currently building an arcane trickster/shadow monk goblin that really leans into the trickster element. I foresee lots of
Making obscene gestures to distract/infuriate opponents
Tying shoe laces together
Undoing belt buckles
Wet willies
Pouring various concoctions into people's clothing (itching powders, stink bombs etc.)
Pick pocketing/sabotage - removing arrowheads form quivers, cutting bowstrings, lubricating weapon handles, planting evidence
Some would be more situational - knocking down/carrying a bee hive/wasp nest to drop on a group of enemies
Combine this with all the illusion spells your can learn. The possibilities are endless
I don’t think the obscene gesture will work. Isn’t the Arcane Trickster’s mage Hand invisible?
It could be invisible or visible you choose when you cast it.
