What kind of action is it to use the 3rd level Eyes of the Dark feature from Xanathar's shadow magic origin? Specifically if I cast it using sorcery points.
I would assume it is more of a free action like using quicken metamagic but can't find anything specific relating to it. I assume if I cast it using a spell it's a regular action or bonus action if quickened. Feature typed out below.
EYES OF THE DARK Starting at lst level, you have darkvision with a range of 120 feet. When you reach 3rd level in this class, you learn the darkness spell, which doesn’t count against your number of sorcerer spells known. In addition, you can cast it by spending 2 sorcery points or by expending a spell slot. If you cast it with sorcery points, you can see through the darkness created by the spell.
That being true, I trust I can user sorcery points to cast it, but have it use my bonus action with quickened metamagic?
Yes, you can cast it as a bonus action (still following the rules on bonus action casting) for 4 sorcery points.

It costs the same Action as casting the spell always does. You're simply powering it using sorcery points instead of a spell slot.
