So, say I'm a blue dragonborn sorcerer that's resistant to lightning damage, now say that I chose a blue draconic bloodline. At 6th level I could spend a sorcerery point to become resistant to lightning, but I already am, so I could spend one to become immune, right? Or maybe bump it up to two?
Unfortunately for you my friend, resistances don't stack.

Born under the watch of something from the furthest corners of the far realms.... It knows all.... it sees all... and it asks: "What is it that you want to see?"... and my answer is... ALL"
Sadly, as Arlong pointed out, no. But that doesn't mean you lose out on anything. It just means that you can now use that sorcery point to enhance a spell to do more damage rather than having to worry about your own protection.
One other thing to keep in mind regarding resistances:
I played a brass dragonborn draconic sorcerer. Almost all my spell attacks were fire based. But many monsters have resistance to fire damage, so I took the feat "Elemental Adept" which bypasses fire resistance. So a fire resistant target would still take full damage, and a target immune to fire would only be resistant.
Well, I got a bit careless. I cast Fireball at a couple of lesser demons in close combat, thinking that they would take full damage, and my brass dragonborn racial buff would give me resistance. Well... I quickly discovered that my own Elemental Adept feat bypassed even my own fire resistance. I killed one of the demons, but I damn near killed myself in the process.
oops.

No. That character was a bit... reckless. I had chosen Empowered and Quickened, and later Distant.
Basically, I had created that character while watching the movie Aladdin, and I thought it'd be fun to play Jafar as a D&D character (if Jafar was a dragonborn).
He ended up betraying the party to a Devil, in exchange for power. Now he's in the homebrew monster section as a large fire elemental, "Ikram Sahir ibn Malik al-Sayyid Ra'ad."

If he had died must been awkward how to explain his death to his relatives. How did he die? he fireballed himself to death. Hmm never saw him as a suicidal type.
If Ikram had died from his own Fireball, his family would simply have responded with, "Yeah... that figures."

Unfortunately Elemental Adept has no effect on creatures that are immune to the damage type you choose with it. The feat would say if it did.

The demons mentioned in the post made over a year ago were only resistant.
So what if it was over a year ago?! It was actually over two but that doesn't matter. Just like me responding to you two months later doesn't either. People read these boards all the time for information.
Also FYI I was referring to this line he wrote that was mistaken on how the feat works & not about the demons he was fighting. "So a fire resistant target would still take full damage, and a target immune to fire would only be resistant."
