Why do sorcerers do this? It seems weird as you don’t get to use the character before you pick the path for them to go on like you do with other classes. I guess it makes more sense story wise this way but from a gameplay perspective this seems strange.
It's 100% a story consideration. Similar to warlocks, where you'd be a normal person without your pact, you'd be a normal person without your magical sorcerous bloodline. It doesn't make any sense for there to be a sorcerer without a subclass. :) I agree that from a gameplay perspective it can be slightly uncomfortable, though.
Late reply, but sorcerers get their abilities from their inherent affinity to magic. It's a type of bloodline magic they've probably been accustomed to since they were born.
ie. Dragon sorcerers -> parent or grandparent probably had sex with a human shape shifted dragon, or not shape shifted if they liked it freaky

Sorcerer is born. It has magic. It doesn't discover the cause of magic until level 3.
Doesn't make sense mechanically, so subclass is at level one.
