In addition to it's typical use, now that Grease is non-flammable, you can use it as a fire suppressant. IT WON'T BURN! Need to rescue someone surrounded in flames? Grease will smother the fire, then reach out and have them grab the end of your staff as you pull them across the grease to safety. Need to protect something that must pass through a fire hazard? Cover it with Grease, then push it through the fire. Need to protect part of your ship, like the sails, from fire dragon breath? Grease them up. Yeah, I know it only covers a 10x10ft area, which may not seem like much. But that's usually enough to rescue someone or protect a small area at least. And since it lasts a minute, multiple castings can cover a larger area if necessary.
Making it non-flammable may have nerfed the extra damage potential, but I think it has more utility.

Debateable and requires specific circumstances. Wooden, flammable, floor can be covered completely by the grease? Sure. Every other circumstance? No. You can't cast it on a person, or any object other than "the ground". So, if the fire was burning due to oil, you cannot cast grease on the oil and cannot target the ground (even if you could, you'd just have the oil on top of the grease, so you just wasted the spell.
If you need to put out fires, there's other spells. You can also just use a thick blanket.

Grease works the exact same as 2014 version. The original was not flammable. People liked to interpret "grease = flammable" but this was false. Grease is a general term covering all sorts of substances with the only commonality being that they are all lubricants. The majority of greases aren't flammable. Yet, people only thought of their common everyday greases that were flammable so they associated the grease from the spell as flammable. This was a mistake on their part. In D&D things are flammable when specifically described as such and spells only do what they say: the spell only creates a generic grease and does not designate it is flammable. So, no, the 2014 spell's grease never was flammable.
Yet it was a popular homebrew even when the mistake was pointed out. This made Grease too strong for a 1st level spell. This is why the 2024 version specified it is non-flammable - to stop the misconceptions once and for all so people will use the spell as originally intended (personal DM fiat notwithstanding).

Use grease on a slope and hope the DM gives the enemy disadvantage. Prevent an enemies retreat by greasing the wall they have to climb over.

You're right about the 2014 assumed flamability. Hope if you DM that's not your call for your players sake.
