You already can sort spells by level in the app. Press “Sort” at the top right, and you should have the option to sort by: name; class; level; casting time, and school.
The mobile app only sorts by class and name. (Recently updated and viewed on Android. Tablet users are likely accessing through browser.)

My answer just above yours was specific to the mobile app, not the website. I have all those options in the app. I don’t have the app on my phone, only on my iPad, so I can’t check there, but at least in landscape view on a tablet they are there in the app.
Why are the only options to sort spells by alphabetical or by Class? There's no way for me to see from lowest level to highest level

Nope, only class and name are available to me.
I see all the sort options haggis does plus an “advanced options”line that adds others. I’m working on a 10” iPad Pro. What device are you using?

it's been 5 ******* years and there still isn't an option to sort by level
There is an option at the top of the listings in the app to sort by level, both ascending and descending.
Tap the sorting option at the top where it says "Listings", then select your sorting type and order
