Some cantrips show up as actions and some don't. An example, eldritch blast shows up as an attack actions. But sacred flames does not. I would also have thought things like light would show up in the other action. I mean interact with object does.
At first I just though cantrips weren't showing up. But then eldritch blast ended up showing up.
I think it's because Eldritch Blast requires an attack roll, where as Sacred Flame needs a Saving Throw. The first can be considered as an attack, hence why it appears in the attack action, but the later is considered as casting a spell only, hence why I believe they didn't add it in the actions section.
You can edit any spell to make it show up as an attack, though -- in your character sheet, click on the spell to open it in the sidebar. Click on 'customize' to open the dropdown menu. There should be a button that you can check that says 'display as attack.' Go back to your actions pane and the spell should be there.

Those two are a special case, because they involve an attack with a weapon, and that’s the attack roll that’s made. There is also the issue of the damage begging correct (because the damage is partially dependent on which weapon you use to attack with). There’s been a lot of debate on these forums about how to handle that. That said, I just checked on a character I have with booming blade, and if I follow Pocketmouse’s instructions above, it will show up as an attack.

The information for those spells are normally listed in the "Notes" section for specific weapons that you have equipped (which show up on the "Actions" tab). As ArwensDaughter mentioned, it's done this way because making an attack with a melee weapon is the 1st step of resolving those spells anyway.

When I try to edit the cantrips, it definitely does not let me display as attack (level 7 eldritch knight).

It should let you display as attack. Where are you accessing the spell to “edit” it? Is there a “Display as attack” checkbox under Customize?
What device are you working on? What operating system and browser?
I meant to say customise, and it is definitely not there for these 2 cantrips (green flame blade, and booming blade). The checkbox appears for every other spell in my spells list, Shield, Absord Elements, Scorching Ray, Shadow Blade etc.
I use Google Chrome, and I have checked on my mobile, my desktop pc and my surface go. All the same.

I did notice when I tested today that the checkbox was a bit sluggish to register my “click”. (This was on an iPad running iOS12)
