Certain feats like metamagic adept and fighting style initiate don't allow you to actually chose a metamagic, fighting style, invocation, etc, at least on variant human. Why? :(
As mentioned in the Tasha's Cauldron of Everything thread, it's not currently possible for class features such as metamagic, fighting styles and invocations to be added via non-class features such as feats.
They don’t do timelines or etas, because it’s far too common for things to disrupt them. They shut down for a company wide break the last half of December and first week of January, so it’s not likely to be before then, although they are still actively working on implementing bits of Tasha’s they couldn’t get done before release.
