Under Modifier subtype, you can choose "Choose Dex or Con" or even "Choose Dex, Int, Wis, Cha".

But not every option is there.
To make the UA Minotaur, I need "Choose Str, Int, Wis."
Surprised that if some were there, all combos were not there.
