So maybe I don't understand the rules and if someone can explain it, that would be awesome! I am looking at my character sheet of a warlock level 1. I have +2 proficiency bonus with a starting weapon of a light crossbow. Under damage, on my character sheet it has 1D8 + 1. If I am proficient in that simple weapon, shouldn't be a +2, since that is what my bonus is? Any clarification would be greatly appreciated!

You don't add proficiency bonus to damage rolls.
Proficiency only applies to the attack roll if you are proficient with the weapon.
Warlocks are proficient with a light crossbow and I am guessing your Dexterity modifier is +1. If so:
Attack Roll: 1d20 + 1 (Dex Mod) +2 (proficiency bonus) = 1d20+3
Damage Roll: 1d8 + 1 (Dex Mod) = 1d8+1
