I'm making a fighter for my campaign rn, and I want to use the Psi Knight subclass. I bought Tasha's Cauldron of Everything and have used that content to make other characters (paladin) and it was fine.
However, when I go to make my Fighter, I only have access to Champion or Rune Knight, nothing else, despite all sources being selected in the toggle.
Is this a site issue or a me issue?
EDIT: I have access to rune knight, not eldritch as I originally said.
Do you have "Expanded Rules" checked on the Home tab in the character builder? This is necessary to use any character options from outside the core books, including Tasha's Cauldron of Everything.
If you purchased it recently, you might also check this page and see if it says your entitlements data is out of sync. Sometimes it takes the character builder a while to catch up to the availability of new content in your account. If that's the case, there should be a button on that page to sync it up manually.

I misspoke in my OG post. It's Champion and Rune Knighr, not Eldritch that I have access to. Everything else is missing from all my source books (2014 PHB, TCE, XGtE, Ebberon)

In that case you've probably selected the 2024 Fighter class when you want the 2014 one. If you don't own the 2024 Player's Handbook, then if you select the 2024 Fighter you'll only see the one subclass from the 2024 Free Rules, plus any expanded rules subclasses that haven't had a 2024 update.
So, what you need to do is remove the class you have selected, then scroll down on the Class page and select the 2014 Fighter class instead. It's the one whose icon is a shield with a sword and axe crossed behind it (as opposed to the 2024 Fighter, whose icon is just a sword with a couple of swooshy things on either side).
