Shouldn't Unarmed Strike have a minimum damage of 1? My character (with a strength of 8) lists Unarmed Strike damage as 0.

there's no rule for minimum damage (though damage can't become a negative number, as that would be .... odd).
Having a strength of 8 does indeed mean that your unarmed strikes inflict zero damage.
