Is it possible that you turned on additional filters? I am able to return a large set of results filtering "Elemental" type of monster and "Underdark" environment with no other filters.
To be clearer, I don't mean when clicking on "Elemental" at the top. I you leave it set as "All Monsters", then choose Underdark as Environment, and then in Additional Filters choose "Elemental" from the list of Monster Tags, you will get no results.
Why do they even have Elemental as a Monster Tag option if not every elemental has the tag?

The elemental tag does not refer to elemental creature type. I think it is refering to elder elementals (tag might be misnamed).
