Life domain is the only one in the basic rules, you'll need to buy the book that contains the domain you want, or just the domain by itself to get access. Alternatively, you can create a homebrew subclass that's identical to an existing domain, just don't publish it.

Other domains are available by purchasing sourcebooks (or just the subclasses from within them), as part of Unearthed Arcana (enable the "Playtest content" slider for your character) or you can homebrew your own.
Playtest content is stuff that hasn't been published in an official book. WotC releases it for people to use and try out so they can find out what works well and what doesn't. The slider controls whether the character can choose those options for various things. For an example, the artificer class is currently in playtest (though it will soon be officially printed) so if you don't allow playtest content, you won't have access to that class.
