There is no bug - it's working as designed (the tooltip). When you hover over the Exhaustion condition, it displays the information about each of the levels of exhaustion in the tooltip.
Staff are working on a major overhaul of the character sheet currently - exhaustion levels may be part of that, but I don't know until we see it.
Is there any way that I know I am at level 3 for example so I know what effects apply? Or should this just be noted outside of the sheet for the time being?
If you're working with Homebrew content, I made a short-term fix by creating a magical item called Exhaustion Tracker. There's no actual effects or special qualities to the item, it just has six charges that allows you to keep track. Unfortunately, It wont apply the consequences, but I've listed the Exhaustion rules in the item description for my players.
I just attempted to publish a simplified version. However, instead of the detailed rules description, there is a link—with the quoted content from the PHB I'm not certain it would get approved.
Thanks! I had moderate success automating the process by creating custom magic items representing each exhaustion level. But it took some time to do.
I also was disappointed to learn that DnDBeyond has been blocking users from publicly sharing these. I understand the rationale of wanting to keep the home-brew magic items list to actual magic items, but an exception should be made for this as it's a case of a creative solution made by users to a long overdue problem with the app.

On the character sheet, in the hit point status pop-up, the menu for adding condition include a single entry for "Exhaustion".
"Exhaustion" isn't a condition. Characters can gain (and lose) Exhaustion Levels, which have cumulative effects.
This still doesn't seem to have been addressed.
And exhaustion doesn't have any effect on the character sheet that I was able to locate.

I too have found this rather annoying... I suppose for now we are just going to have to write our exhaustion level down in one of the notes sections?

Exhaustion levels are in the Basic Rules so you’d probably be okay.

Character Sheet revamp went live yesterday, but still no way to track Exhaustion Levels :/

Was this ever addressed? Exhaustion levels don't seem to apply automatically other than death
You can track the levels, yes, but not their effects. Those still count as temporary effects that the character sheet cannot apply.
