D&D Beyond will always update content to the latest version published by Wizards of the Coast.
As with any errata, or content update, this includes classes, subclasses, races, subraces, feats, items etc etc.
A new, updated version of The Wayfinder's Guide to Eberron will be published soon, so that the compendium content matches the content from the new Eberron sourcebook.
This is not an update; it is overwriting. These were two separate source books that were paid for with different content. As we can clearly see in the character builder, all of the "updates" to various races have never before "updated" over the other old content and race options. I can still play as a normal human, I can still play as a variant human. The new "variant" humans didn't overwrite the original "variant" human, they simply coexist. It is entirely unreasonable to pretend that this is normal; paid content has been deleted.
Variant human is not an update of the human race. Both are present in the PHB, and a variant is simply a variant option of the conventional human race.
Not the same case with the Warforged at all.
It's exactly the same. One version was presented in the WGtE, and a different version was presented in a later, separate book.
I'm not comparing Variant to Base as in the PHB. I'm comparing Variant in the PHB to the variants printed afterwards in different books.
Warforged in ERftLW is NOT a variant of the one printed in WGtE. They are the same thing. They were supposed the same thing from the very beginning, as per WotC (you can ask them, but Jeremy Crawford told that in an official video).
I don't particularly care for accessing the old versions because the old warforged was busted as hell balance-wise, but could there perhaps be an option added in the future to toggle the WGtE/UA versions of the Eberron races? I get the logic that this is technically an update and the material going forward is going to assume the new versions as the 'final' and 'official' versions, but obviously a lot of people want the WGtE/UA version as an option. Perhaps that could be a feature added down the line?

I'd be happy with this solution, though I think its a directive from Wizards that they remove the old ones.
I'd put good money on this being the case. In which case I'd say lay off the DNDB staff because if the orders come from on-high, there's nothing they can do about it.
That said if this is indeed the case, it may be worth passing that feedback onto WotC. I get WGtE was a test bed both for Eberron content and regularly updated digital releases, but I think it's fair to say the final versions of the new races are vastly different to the ones initially released and tested. So while I personally have no interest in letting someone play the super-munchkin-y version of the warforged from WGtE/UA, if someone else wants to and has a game they're allowed to use it in, I think it'd be nice for them to have it as an option for their digital character sheet.

Down the line? Why should anyone wait for them to simply put back what they took away? Why should I lose access at all to content that I already paid for? Plenty of variants and subraces already exist and didn't overwrite each other; and far more "unbalanced" races exist, and have since before the Warforged even came out. There is no reason to delete content that has been purchased, or to attempt to "balance" through the removal of content a game that is played entirely under the rules of the DM. I have no issue with WotC saying "Golly a lot of people didn't like that version of Warforged, so here's one for them". I don't even have a problem with them banning certain races or variants in Adventure League. What I have an issue with is WotC and DnDBeyond saying "Gee I know you paid for this and liked it, but because some other people didn't we're going to take yours away and give everyone the one they wanted instead." Just make the variants as usual and stop taking things from people. No one is forced to use or accept any race. Removing the option to use one from people who paid for it is pointless and ridiculous.

The two books are meant to coexist and yes, there is some overlap, like the Warforged. Also, did you realise that the updates of the Warforged and the coexisting of the two books, and how they are implemented, are coming directly from the designers of WotC? They get to decide which is variant and which is updated and DDB needs to follow those directives as per their agreement.

WGtE was always test content that they specified would be updated in time, and if their plan is to make the changes in WGtE match with ETLW, then that was always gonna be their prerogative. I don't necessarily agree with it, but if it's a WotC decision, DnDB have to abide by it. Tell them to ask the masters nicely, but don't shoot the messenger.
Worst comes to worst, the homebrew functionality on this website is really easy to use. I'm sure someone will whip up the old version in that post-haste.

Why do I have the option to buy stuff that I have already unlocked? My Store Page for WGtE shows the content is Unlocked, but I can add things to the cart?
As someone who has only bought the warforged race from WGtE, suddenly not having them is the creator is utter BS. Sure, it's only $2, but I don't expect an upgrade to take something completely away that was PAID FOR.
The sensible thing is just to make the original WGtE Warforged available as UA.

I was just looking at Facebook and noticed a post from yesterday, in the comments someone from D&DBeyond says: "In this case, Wizards of the Coast does not want outdated, or abandoned rules available on the D&D Beyond platform"
So I don't think we'll ever see this happen without a great deal of pressure on WotC directly, I'm just not entirely sure of the best way to do that. Or maybe D&DBeyond can add the sub-races as homebrew or something else instead.

That's bizarre, because almost all UA is outdated or abandoned. Still: that's Wizards' problem and DNDBeyond's problem. They can either annoy their customers by not permitting it as UA for no obvious benefit, potentially reducing future sales of things such as WGtE ... or they can be logical.
