Well I got my link and all that but my iPad will no longer update its OS so I am stuck with iOS 9.3.5 or 9.3.2 but app says it needs iOS 10 or better does anyone know if that is just for the testing phase or am I looking for a new tablet?
I don't know whether TestFlight (Apple's beta-testing software) requires iOS 10 since it only debuted relatively recently - in which case maybe the Beyond app won't require it once it releases for real. Will have to wait for developer comment on that. That said, iPad 2 is 6.5 years old, which is a long time in mobile terms, and hasn't been officially supported since 2016. I wouldn't be surprised if the final app only supported newer hardware, especially as Apple is pushing for 64-bit-only apps. You can get a new iPad model (I have one, it's very good) for $450 CDN, or a second-hand Air or Pro for less.
The D&D Beyond mobile app will require iOS 10 or later.
We will always do our best to be as inclusive as possible with device support and there are many factors when determining the minimum version; such as, number of devices on said version, security, modern library support and development/maintenance time to support older versions.
I, too, have an old iPad 2 that I use for e-reading and web browsing and I would have loved to extend support for the app to it. Sadly, Apple has determined that any devices before the 6th Generation will never receive iOS 10 or later, and iOS 9 stopped receiving official updates in 2016.

While this is disappointing, I understand the problem. Is there a way to convert my IOS TestFlight invite into an invite for Android that I could use on my phone? ;)

Yep, you certainly can. The Alpha includes access to both Android and iOS; and is only limited to two devices concurrently (managed from your Account -> Mobile Devices on the website) regardless of platform.
Follow the process in your original invite email or contact support if you have trouble or no longer have the email. If you did not provide your Google Play email address (that you use in the Play Store) in the original email, you may be better off going straight to support so they can get everything in order for you. :)

Even a blind squirrel finds a nut once in awhile.
Same boat. I'll be disappointed if we at some point aren't able to use our iPad2 for an application like this. :/
