In your example above, all players would have access to A, B, C, D & E. :)
I pay for the master subscription and own most of the core content (excluding Campaign books). I heard somewhere that sharing works both ways.
For example lets say I'm playing a campaign with multiple players.
Player 1 (Me): Owns Books A,B,C,D
Player 2: Owns books D, E
Would this allow the other players to use books A, B, C, D and E?

Yes, the sharing currently works as an "all-in" thing.
As long as they create a character in your campaign that has sharing activatet ;)
