Hello I am a new player and I am not sure what I can you do with the herbalism kit. I have read a few sources including Xanathar's guide, but it has not cleared up what can I do with it besides some nuanced details about edible herbs.
I understand the crafting process for a health potion, but what about an antitoxin potion. How do I craft an antitoxin potion? Is there anything else I can a make?
Lets say I gathered some herbs... I am not sure what I can do with those herbs. Like can I store poisonous plants or plants that have other uses.
These are all great questions to ask your DM -- a lot of these aren't detailed in the rules, which means the DM gets to make those decisions, and you get to try and find creative ways to apply it. So aside from the obvious stuff that the book says, you can extrapolate from the examples XGTE gives: if you're trying to tell if the shifty NPC has spiked your drink, reminding the DM of your proficiency with the herbalism kit may allow you to add your proficiency bonus to a perception or investigation check. And the tools in the kit can be useful -- you've got leather gloves and glass jars that you can use for collecting things other than just plants.
