Can gem dragons become shadow dragons? I know metallic and chromatic can. The problem I see is that metallic and chromatic breath elemental based breath and have scales, while gem dragons breath different kinds of breath, like force. It also sorta looks like they don’t have scales, their natural armor being the gem that kinda makes up their body. It would help me if you guys could figure this out. Thanks.
Shadow Dragons aren’t always born; sometimes they’re made. When a true dragon (as opposed to a Wyvern or a Drake) is born or remains in the Shadowfell for a number of years, the energy of the plane of shadows corrupts its form, warping it into a nightmarish beast made from pure darkness. All gem dragons are true dragons so they should also be able.
Even though they do become creatures of pure darkness, they retain their alignments, right? So theoretically a bronze dragon could stay lawful good, right?
i dont think there are rrules for when other true dragons become shadow dragons so it'd be up to the DM if it adopt the shadow dragon's statblock or if it retain any feature.
It's your game, you can do what you want. You could turn a goblin into a shadow dragon if you wanted to. I took Duegar and turned them away from smithing into bioengeering with the mind flayers splicing in their own DNA to the point where they had clammy skin, limited psionic and their hands had a suckers on them and if you shook their hand you'd have to make a save vs magic or be charmed by them. Have fun and do what you want.

Also, what would shadow gem Dragonborn breath be like? For metallic and chromatic, it is shadowy elemental breath.

it would most likely be a shadowy version of its gem dragon breath type
So shadowy force breath, ok. Shadowy radiant breath, uhh. Shadowy psychic breath, maybe? Shadowy thunder breath, sure. Shadowy necrotic breath, that’s fine. The force, radiant, psychic breath sound weird being shadow though.
