I was looking at the spelljammers that were released and I noticed something very odd, all the ship's are considered large size. Some of them being 130 to 250 ft long by 30 ft wide. Whats odd about this is the water vehicles of 130 ft long by 20ft are considered Gargantuan size... so if that's the case why are the 130 ft plus spelljammers only large?
Go under game rules and vehicles. Scroll till you get to the spelljammer ships and open any of the pages and if will give a vehicles state block and the size is under then name like a creatures would be.
Apologies for that - it's an issue with our vehicles system that we only realised when Spelljammer went live - when we don't specify a size (and as you noted - Spelljammers don't have a size) the system defaults to "Large"

I can’t find any reference to spalljamming ships being Large sized. Where are you reading that?

Oh cool I didn't even notice they added the vehicle section. I only looked at ships in the book.
