I'm working on a campaign with a player who loves mixing fantasy and dinosaur encounters. Any good suggestions for published adventures or smaller encounter products that feature dinos to a fair extent?
I do own/plan to use Tomb of Annihilation, so I'm definitely familiar with that product.
Any dinosaur-themed suggestions are much appreciated!
That encounter has next to nothing to do with dinosaurs, really. It includes one, but it's just a coincidence that the monster they picked to be attacking you happens to be a Plesiosaurus.
Basically, you're "recruited" into going fishing, and you're attacked by a monster in the water. It happens to be a Plesiosaurus that's been Awakened and told to attack fishers coming from Bremen. The characters can either fight it or try to negotiate with it. I really wouldn't spend any money on getting that encounter on the strength of it containing a dinosaur - just find the stats for a rowing boat and a Plesiosaurus and you're fine.
It's a fine encounter...but it's not particularly related to dinosaurs. The fact that it contains a dinosaur is incidental. Plus, it's only one encounter in the whole thing.
Unfortunately, beyond ToA, I'm unaware of any other published 5e adventures that contain dinosaurs. Dinosaurs just being animals makes it relatively easy to adapt any animal encounter by swapping out the animals for an appropriate dinosaur. Sure, it's a bit of work, but not much and it'll save your wallet.

Dragon Heist has a couple of dinosaurs in the boats on the Autumn storyline.
I know there's an interesting encounter in Rime of the Frostmaiden near the start with a pleisosaur.
Isle of Dread is an older module, but had a 5e adaption by Goodman Games. There's a lot of dinosaurs in that one.

You could adapt the "Attack of the Tyrantclaw" Lair Assault from the 4th Ed Era.
