Reborn is the catch all race for reanimated bodies—be it like in Frankenstein, a zombie, etc. Reborn allows you to choose any race as a base, then modify it with the Reborn characteristics, so you can make whatever race you want work for the underling species.
You also might want to consider for your class Circle of Spores Druid - they have a number of fungal based powers that would be appropriate for this usage.
For a source of such a thing then I'd have Yellow Creepers and Corpse Flowers as the main culprits, Yellow Musk Zombies for some basic defence minions for them and then mayeb some corrupted Myconids for flavour.
I'm sure Yellow Creepers and their Yellow Musk Zombies were in a d&d book but for the life of me I can't find which one to reference so maybe I just read a homebrew somewhere.

What race would be the best for playing this zombie fungus?
