I'm looking into the back stories and pasts of the DNS races and classes for a campaign I'm gonna run and I'm trying to understand more about the Gith. Anyone know this and any other facts about them?

Short version is that Zerthimon and Mother Gith disagreed on the direction of their race after overthrowing the mindflayers, a civil war happened, one group went to Limbo and the other went to the Astral.
"Mother Gith", actually the Gith Lich queen Vlaakith, had a role in "disappearing" Gith, for who both Gith factions take their name. Gith was encouraged to take counsel from Tiamat, Gith never returned but Tiamat sources the Githyanki's red dragon stable. There's also a group of Githyanki and Githzerai who are trying to reunite the factions.
Gith is super lore rich, and the wiki IIRC gives a really good guide to material from prior editions that establish a lot of it. 5e's Tome of Foes had some good write up, plus the adventure Rrakma, but they're no longer available on DDB, but I believe you can probably find copies in books stores with out "collectors'" pricing (Tome of Foes, I forget whether the adventure was DDB exclusive or online content or at the end of Tome of Foes).
A sort of out of left field 3rd party riff on the Githyanki is MCDM's Time Raiders, found in their 5e bestiary Flee Mortals! Takes the Githyanki's plundering ways and ties them up with Blue Oyster Cult's "Veteran of the Psychic Wars" and gives them another set of arms, and makes them a little more alien.
One "problem" with Githyanki lore, and to a lesser extent Githzerai lore, is that a lot of what's going on in Githyanki society at its highest levels is unknown to Gith. Even the Githyanki's most elite warriors, Dragon Riding Knights with Greater Silver Swords, don't know that ultimately their destiny, unless their civilization changes radically, is to be consumed by their queen.

It's true the vast majority of Githyanki don't know what Vlaakith is up to, but there are plenty of avenues for a Githyanki PC to find out - the Sha'sal Khou have been operating for multiple editions now, and BG3 updated the lore with Orpheus and his followers.
Oh yeah, the truth about Vlaakith is certainly a mystery Githyanki PCs can uncover, though that discovery will likely be thought of as something akin to heresy or at least untrue by the bulk of Githyanki society. Githyanki are a pretty rich fictional culture with lots of threads to explore. PCs could be 5th columnists among the Sha'sal Khou, loyal raiders for their liege. Spend more time hunting Illithids and preventing Far Realm incursions into the cosmology. Just really bored looking for solutions to their ennui in limbo. There's a lot there.
There's an old 2e anthology "Tales from the Infinite Staircase" (I guess 5e is going to take a crack at the title next year), one of the adventures involves a Githzerei outpost who's providing sanctuary to Githzerai who believe she's the second coming of Gith.
