Im making a warlock character, but I have limited knowledge on the demons and devils. I want a demon that is specifically focusing on taking over the mortal world, using warlocks to do their bidding. However, I have no idea who can best fit that. Which demon or devil do you think best fits that?
Domination is a pretty common goal for most demon lords and archdevils. The real question you need to answer is what sort of feel you want your character to evoke. What sort of look or aesthetic are you aiming for?

I kinda want someone who is strategic. Lawful evil and intelligent. I know most are very impulsive and unpredictable though. My character is Lawful evil and is good at planning, but often misses the small details that can lead to their downfall. They let their guard down too easily and I want the demon/devil to reflect that if possible.

I'd suggest finding an archdevil patron, as they are the more lawful of the fiends.

Ask your DM. This is a lore question that will vary from world to world and campaign to campaign.

Not only what Metamongoose said, but also have you talked to your GM?
It's important to make sure your GM will feel comfortable with your character, and the elements they bring to the campaign.

Here's a list: https://forgottenrealms.fandom.com/wiki/List_of_archdevils
Seconded.
In FR, devils represent the Law side of evil, while demons represent Chaos. Hence why the two sides are locked in eternal war.
