I don't know if i just didn't look hard enough, but I can't find stat blocks for asmodeus, mephistopheles, belial, or dispater. Am I missing something or do I have to make their stat blocks myself? (Just need their stat blocks for npc reasons).

The stats for most of the Demon Princes and Arch Devils are in the modules, such as Chains of Asmodeus and Out of the Abyss. Hope that helps.
Technically I believe what's in Chains of Asmodeus is stats for an Avatar; 5e recognizes the Lord British Postulate and tries to avert canonically making beings like planar rulers hypothetically killable by smashing them in the face with an uncommon magic item enough times. Most of the Demon Princes have stats since there's no ruler of the Abyss (although Llolth is notably absent), but looks like Zariel is the only Lord of the Nine with one (and, notably, has a higher CR than most of the Princes); you can find stats for subordinates of the Archdevils in MToF if you have access to it and in MotM.
Chains of Asmodeus doesn't say the stats are for an avatar, and there's no reason to think most of them are different in kind from figures such as Moloch (not currently an archdevil, but was one in the past). The canonicity of Chains is uncertain, it's one of the Extra Life charity projects that comes from a completely separate development path, but it's the closest we have to official. In any case, avatar stats are not necessarily any different from main body stats, any incarnation of a devil outside of the nine hells (or demon outside of the abyss) is essentially an avatar, as its destruction just causes the devil to reform in hell.

I don't think avatars exist in 5e. For example, Tiamat has stats and in no place in the adventure module does the word avatar come up. I think the avatar concept was something that started in 2e and ended in 4e.

I vaguely remember one of the Spelljammer books having a part about how to make your own aspect. I think the use aspects in the same way they would avatars.

It's intentional. Beings like that are so far above the level of mortals that any attempt to fight them is automatic defeat.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
