Short and sweet, I removed the unarmed strike from my monk by accident. How do I get it to display again?

If you scroll down in the Actions section, you should still be able to see an "Unarmed Strike" entry with the text describing how it works (not the rollable button with your stats, just the descriptive text). Click on that text, and it'll pop up a sidebar with more details. At the top of that sidebar is a "Customize*" link; click on that and re-check the "Display As Attack" box.
