I get that you can create multiple entries...but what about categories?
Yes, because journals are done on a per-session basis and sessions are tied to the date (under the fairly rational assumption that people are playing their D&D game once a day tops)
Additional quick journal entries add to that session, and you can edit it as well.

That is a rational assumption for the average person, but i certainly know people who run multiple sessions in a day, especially at conventions. Still this journal is better than nothing, or the hand written nightmare of one of my previous DM's.
Not a major deal breaker but I can see some people getting annoyed about this. I am thinking of one person in particular, but if he has a big enough problem he can start using the forums to complain.
