Is Manual of the Planes missing? I ask because I had read the minotaurs already existed in one of the Planescape manuals. In other words, aside from the UA stuff, there was also stuff that already existed in official material that didn't require bringing in playtest material. Or am I missing something? I'm probably missing something, but I was just wondering.
Another thing: should I have been able to download PDF versions of the stuff I bought? It's nice to have it all here, of course; I would also just like to have it on hand on my computer. My email on my twitch account wasn't set up so that might have been a factor; either way, I was wondering if there were a way to download PDF versions of the content I purchased.
Now for #1. You're probably thinking of the Plane Shift series, which is a series of unofficial conversions from MtG to D&D. The Amonkhet one has ram-horned minotaurs.

Some of the races described in this book are suitable for use as player character races. However, they are significantly more powerful than the races in the Player ’s Handbook. If you decide to use these races in your game, adjustments are necessary to maintain the balance of power between player characters using the common races and player characters with more exotic races. Even then, the approval of the DM is required before any race is deemed suitable for a player character (Manual of the Planes 23).
Well, Plane Shift is made by someone who works on the Magic creative team and worked on the 5e Player's Handbook, namely James Wyatt, but it is nonetheless unofficial and ever-so-slightly subpar. I mean, it's good and I use it, but the formatting's a bit wonky and I've had to tweak a few of the races to get them up to about the right power level.

That's just going to be for Ravnica (no Zendikar, Innistrad, Kaladesh, Amonkhet, Ixalan, or Dominaria). As a full-fledged sourcebook, though, it should be much bigger--and better-edited--than a Plane Shift article.

Oh, so is that just gonna stay in UA? I was hoping that it would be absorbed into the official playable races, here.
Unearthed Arcana is playtest content - some of that content makes it to published books, some of it doesn't.
We don't know what will make it until it does really.

And about downloading PDF versions of the content I bought?
You can download the books for offline use in the mobile app. I don't know if it's PDF though.
I'm pretty sure the App doesn't store the info in PDF format. No internet connection is needed though so you can read it with the app.
